BAKED FILLED PASTRY CONNECTS SERBS, ALBANIANS AND ROMA

Bujanovac – There is a place in Bujanovac where residents of South Serbia, regardless of their ethnic, religious or political affiliation, like to come. It’s the “Bis ”bakery in the center of Bujanovac,  where the Serbs, Albanians and Roma sit and eat together .

Owners of the bakery, who are members of a Gorani family, erased with their specialty the boundaries and mistrust among the inhabitants of South Serbia. Hot leafy cheese, spinach or meat pies, which have just been removed from the oven, cheer up all the customers.  

“I eat here whenever I can and I bring my grandchildren, too.  Everyone eats here, such as the Serbs, Albanians and Roma, as well as police officers and others”, explains Vera Stankovic, a refugees from Kosovo and Metohija that came to live in Bujanovac.

 

The “Bis” bakery is the busiest on Mondays, when it’s the market day in Bujanovac.  Then people wait for as long as half an hour for burek to be prepared and baked.  Students of a nearby school are regular customers, too.

“Even though we don’t understand Serbian so well, we all come here during the long break to eat because of the best burek. This burek is our main and best snack”, students of the secondary economics school say while waiting for burek to be baked.

The bakery’s owners claim that there is no big secret in preparing their specialty – the flour should be of high quality and everything should be done by hand and without additives.   

“The flour is type 400. Quality flour, thin crust and no additives result in top-quality burek, says Isan Sarda, one of the bakery’s owners.  

In addition to quality, the customers are attracted by the price, which is 80 dinars and which the owners haven’t changed for years.

Burek at “Bis” isn’t only eaten by residents of Bujanovac. There is no minister or head of a foreign delegation that not once had lunch or breakfast at Isan Sarda’s place

According to the customers, you can find a product that you would want to try again in every South Serbia’s bakery.
